Both have strengths. Shopify is low-maintenance and quick to launch, WooCommerce maximally flexible. I recommend the system that fits your catalogue, budget and team — not the one that pays me most.

Yes, that is standard. You get a simple backend and onboarding to manage products, prices and stock yourself.
